Puffy Oven Pancakes

  • 1/2 cup all purpose flour
  • 1/2 cup milk
  • 2 tablespoons margarine or butter
  • 4 cups sliced fruit *
  • 1/2 cup firmly packed brown sugar
  • 8-oz. carton dairy sour cream

* Any of the following fruits can be used:   Strawberries, bananas, pineapple, raspberries, peaches and blueberries.

I love eggs and I love to find different ways to make eggs.  Here is a great recipe for a Western Omelette Pie.

3 tbsp. oil
1 c. onion chopped
3 1/2 c. frozen hash brown potatoes
1 1/2 tsp. salt
2 tbsp. butter
1 green pepper, chopped
2 tbsp. chopped parsley
1 1/4 c. milk
4 eggs, beaten
1 c. grated Swiss cheese

Cheese Strata with Ham and Tomatoes

Here is a great New Year’s Day brunch recipe you can create that your whole family will be happy to ring in the New Year with! 

Cheese Strata with Ham and Tomatoes
From Food Network Kitchens
1 teaspoon plus 1 tablespoon unsalted butter
12 large eggs
1 1/2 cups milk
1/2 cup heavy cream
Pinch freshly grated nutmeg
Pinch cayenne pepper
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup diced baked ham
1 cup Oven-Dried Tomatoes, chopped, recipe follows
1 tablespoon minced flat-leaf parsley leaves
1 1/2 teaspoons thinly sliced fresh chives
2 cups shredded extra-sharp cheddar cheese (about 8 ounces)
1 pound sourdough bread (boule preferred), crust removed and cut into 1-inch cubes
