BEEF RAGU W/BEANS
- 2 large carrots, peeled and coarsely chopped
- 2 large ribs celery, coarsely chopped
- 1 large onion, coarsely chopped
- 4 cloves garlic, peeled
- 2 pounds ground beef
- 2 cans (14 1/2 oz. each) diced tomatoes
- 2 cups beef broth
- 3 tablespoons tomato paste
- 2 teaspoons sugar
- 1 can (15 1/2 oz.) cannellini beans, drained, rinsed
- 1 1/2 teaspoons dried Italian seasoning
- 1 1/2 teaspoons salt
- 1 teaspoon red pepper flakes
For Serving:
- 1 pound rigatoni, cooked
- Grated Parmesan cheese, optional

- 2 lbs. round steak, cut against the grain into 3/4 inch slices
- 3 large red or green peppers, trimmed, seeded and cut into 3/4 inch slices
- 2 large onions, halved and cut into 1/2 inch pieces
- 1 can, 14 1/2 oz., stewed tomatoes, drained
- 3 cloves garlic, chopped
- 1 cup beef broth
- 1/4 cup lt. soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons cornstarch
- 1 teaspoon sugar
- 1 can bamboo shoots, drained (8 oz.)
- 3 cups cooked white rice, prepared from 1 cup raw
