Smart Salads

Healthiest pasta salad:

  • Substitute whole wheat pasta for penne pasta.  Whole wheat pasta is high in fiber and fills you up better so you eat less.
  • Add bell peppers.  Bell peppers are high with immune-boosting vitamins C, A, and Vitamin K which is crucial for healthy bones.
  • For protein, use canned light tuna.  It has less mercury than white tuna and is high in protein and Vitamin B12.  B12 is a mood lifter known to help create more serotonin.

Hoppin’ John Salad

  • 2 1/2 cups low-sodium chicken broth
  • 2 Tablespoons canola oil
  • 8-oz. box dirty rice mix
  • 15-oz. can black-eyed peas, drained and rinsed
  • 1 cup chunky salsa
  • 2 stalks celery, diced
  • 1 carrot, diced
  • 1/2 red onion, diced
  • fresh flat-leaf parsley for garnish (optional)

Apple Salad

  • 6 or 8 apples, diced
  • 1 can pineapple (tidbits)
  • 1 dozen marshmallows
  • 1/2 cup nuts
  • Grapes, oranges (optional)

Dressing:

  • Pineapple juice
  • 2 eggs
  • 3/4 cup sugar
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 cup cream

Instant Fruit Salad

  • 1 pkg. vanilla instant pudding (dry)
  • 1 large can fruit cocktail (not drained)
  • 1 cup miniature marshmallows or less as desired

Blend together, refrigerate 1/2 hour and add 1 container of cool whip, thawed. 

You can vary this recipe with other pudding flavors and various canned fruits or fresh fruits.  Try adding green grapes, bananas, pineapple, grapefruit and oranges.

Seven-Layer Salad

My family loves Seven-Layer Salad.  I like to use fresh, good bacon - not the store-bought kind - the REAL good stuff!

  • 1 head lettuce in bite-sized pieces
  • 1 cup celery (cut up)
  • 4 eggs (hard cooked and diced)
  • 1pkg. frozen peas (cooked)
  • 1/2 cup green pepper (diced)
  • 1 sweet onion
  • 8 slices bacon (fried & diced)
  • 2 cups mayonnaise (1/2 Miracle Whip)
  • 4 oz. cheddar cheese (grated)
  • 2 tablespoons sugar

Lemon Shrimp Pasta Salad

Lemon_shrimp_pasta_salad 3 cups (8 oz.) farfalle (bow-tie pasta), uncooked
1 lb. fresh asparagus spears, cut into 2-inch lengths
1 cup KRAFT Light Zesty Italian Reduced Fat Dressing
1 tsp. dried oregano leaves
1 tsp. grated lemon peel
1 lb. cooked large shrimp (20 to 25 count)
1 cup halved cherry tomatoes
1 pkg. (8 oz.) KRAFT Natural 2% Milk Reduced Fat Colby & Monterey Jack Cheese Crumbles

Salad Pizza

This recipe for Salad Pizza is a great winter salad treat that will only take you 5 minutes to prepare! 

  • 1 package (one 14-oz crust) large baked pizza crust (Boboli)
  • 7 thin slices provolone cheese
  • 1 cup, 4 oz., mozzarella cheese shredded
  • 1/2 package European blend salad mix (4 cups)
  • 1/2 small red onion, thinly sliced
  • 1 large plum tomato, cored, halved lengthwise and thinly sliced
  • 1/4 cup light Caesar salad dressing

Broccoli Salad

Broccolisalad BROCCOLI SALAD

  • 1 teaspoon salt
  • 1 lb. broccoli florets
  • 1/2 cup toasted slivered almonds
  • 1/2 cup cooked, crumbled bacon
  • 1/4 cup red onion, chopped
  • 1 cup of frozen peas
  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1/4 cup honey

Pasta Salad

This Pasta Salad recipe is great anytime of year!  Very delicious and a family favorite of ours!

PASTA SALAD

  • 1/2 lbs. small shells

Purchase the following unsliced from your favorite local deli, then cut in squares:

  • 1/4 lb. provolone cheese
  • 1/4 lb. hard salami
  • 1/4 lb. pepperoni

Then add:

  • 2 tomatoes, chopped
  • 1 green pepper, chopped
  • 1/2 jar olives, leave whole
  • 1/2 onion, chopped
  • Small bottle of Italian dressing - your favorite brand

Cook pasta shells, drain, and place in large bowl.  Cut in squares cheese, salami and pepperoni.  Add to shells.  Add remaining ingredients and stir.  Refrigerate for at least 12 hours before eating.
